My name is Spencer. I am a 29-year-old classically trained chef. Originally from Australia, currently I am living in BC. After moving on from my Head Chef position in Japan in 2018/19 I spent the 2019/20 season at Revelstoke's Bison Lodge. Bison is a high end heli-ski lodge, where I was employed as the Sous Chef. I would work in a very intimate home style setting with the guests, tailoring meals to specific requests or dietary requirements. Most of my here work was done on a solo basis, working alone in the acquiring of ingredients, preparations, service, and presentation of all meals.
