A trained Chef and former owner of two successful restaurants. I am now semi retired. Yes....I'm getting a little old....But it's those 30 years of cooking experience that helps me put out a great meal!
I have a love of layering my flavours. Well structured sauces are the backbone of my meat dishes. A passion for spices gives me freedom to take my flavours in a multitude of directions. I can cook deconstructed flavours, which allow for the pallet to "climb the ladder" or I can cook taste bombs! I am at ease with home cooking as I am with fine dining.
I have great respect for classic cooking. Dishes that call for few ingredients but the quality of the ingredient makes the dish.(eg.carbonara) I have taken a sommelier course so I am somewhat proficient at wine parings.
