Initially trained in Hanalei town on the north shore of Kauai, Hawaii. With over 6 years in restaurants, 4 years behind the sushi bar and 4 years as a private chef specializing in sushi, I will deliver you the perfect, custom-tailored, edible art experience. Whether we work on a menu together or it is Omakse Shimasu. I can provide a traditional style, fusion or vegetarian meal that will rival, if not surpass, any sushi available within the United States. I have worked in multiple sushi bars in Hawaii and in Santa Cruz, CA. My favorite two, the Hanalei Dolphin and Akira Santa Cruz, serve the best pacific fusion sushi available here in the U.S. I will create your meal using the same specialized equipment you would find in a high end restaurant. I hand select only the freshest & finest ingredients. Choosing organic and local as much as is possible. I am highly versatile when it comes to location. I can make, and serve, an excellent meal in almost any environment. I have experience in groups small and large, from an intimate anniversary or birthday dinner to large events such as fundraisers or weddings. From private homes, commercial spaces, grassy fields or yachts. If there is any equipment needed that I do not have, I will build, rent or buy it to create the perfect culinary experience. I can also offer a delicious variety of cooked food for people in your party who may not like sushi. My food is prepared and served with an exacting eye for detail, dedication and love for the honorable craft of edible art.
