I'm a Chapel Hill native who has spent decades cooking healthy and delicious dishes. I like to joke that food is my second language. I'm a self-taught chef /home cook and over the years, I've worked as a private cook, led community dinners, and spent time in NY cooking all organic meals at a holistic elder care facility. My specialty is cooking for people interested in clean eating and those who may have dietary restrictions. I eat for health and have studied how the foods we eat can positively or negatively alter mood, energy, inflammation and our overall well-being. That said I spend years baking gluten free desserts from cakes to tarts and I specialize in chocolate truffles. I'm on a mission to prove that eating healthy and with dietary restrictions and specific diets can be mouthwatering and easy. I specialize in gluten, dairy and egg free dishes that are loosely geared in a low-grain direction. I make nutrient dense raw vegan desserts and spent three years cooking a low histamine diet for myself and others. Here's a smattering of what a dinner menu can include: Pesto roasted chicken thighs "Cheesy" roasted cauliflower florets Spinach salad with fresh apple slices, toasted candied walnuts, sauteed mushrooms in a garlic vinaigrette Beef stuffed bell peppers Maple and mustard roasted brussel sprouts Taco night! A low histamine menu will adhere to your specific needs and could look like this: Tender salmon with lemon and herbs Shallot and turmeric rice pilaf Cucumber and scallion salad with an olive oil herb dressing Blueberry and rose cake with coconut-based whip cream I prefer to make desserts using dates, coconut sugar, and maple syrup as a sweetener. However there is nothing like a good pate sucre tart. Dessert sample menu: No-Bake Chocolate Hazelnut Raspberry Cupcakes (vegan, semi-raw) Cornmeal Plum Buckle Pumpkins Spice Double Layer Cake Chestnut Cream and Ganache Icing (seasonal only) Raw Blueberry Lemon Cheesecake Squares Classic French-Style Peach Tart For ongoing clients I will email you a sheet with food preferences, including flavors, textures, hot, cold, etc. which you'll fill out and send back to me.
