Experienced chef with over 25 years experience in large and small establishments with a variety of cuisines. I also have an accounting back round to keep on top of the numbers. I have overseen a staff of 25 in a high volume establishment grossing over 9 mil per year to working in a one man kitchen. I like working with fresh ingredients in a scratch kitchen. I don't like to waste ingredients and always watch the bottom. I also like to get my hands dirty in the kitchen. I won't ask anyone to do anything that I wouldn't do.
