IN 1981, FABRICE POIGIN BEGAN TRAINING AT THE AGE 16 IN THE SOUTH OF FRANCE UNDER THE WING OF FAMED 2** MCIHELIN CHEF “JACQUES MAXIMIN” AND EARNED HIS CHEF’S DIPLOMA WITH HONORS FROM L’ECOLE HOTELIERE DE NICE. IN 1985 FABRICE BECAME AN ASSISTANT CHEF FOR FRENCH PRESIDENT “FRANCOIS MITTERAND” AT THE PALAIS DE L’ELYSEE IN PARIS. UPON FINISHING HIS TRAINING WITH MISTER MAXIMIN, FABRICE BECAME A SOUS-CHEF AT 3*** MICHELIN PAVILLON LEDOYEN ONCE AGAIN IN PARIS, A FAMOUS RESTAURANT ESTABLISHED IN 1792. IN 1990, HE MOVED TO THE UNITED STATES AND QUICKLY MADE A NAME FOR HIMSELF AT BAGATELLE AND THE SKY ROOM AT LA VALENCIA HOTEL IN LA JOLLA. IN 1992, HE WAS HIRED AWAY TO OPEN THE MANCHESTER GRAND HYATT AND SUPERVISE ITS SPECIALTY SEAFOOD RESTAURANT “SALLY’S ON THE BAY”. IN 1998, THE URGE TO OPERATE A SMALL BUSINESS WITH HIS SPOUSE MARILYN TOOK HIM DOWNTOWN ON 6TH AVENUE WITH THE OPENING OF “VIGNOLA”, A QUANT FRENCH ITALIAN BISTRO IN THE GASLAMP QUARTER. IN 2001, FABRICE MOVED ON TO BIGGER THINGS BY JOINING THE CREW OF “BERTRAND AT MISTER A’S”, A 4 DIAMOND MOBIL AWARD FINE DINING RESTAURANT AS AN EXECUTIVE CHEF. IN 2004, FABRICE JOINED URBAN KITCHEN GROUP AND MANAGED THE KITCHEN OF 3 ACCLAIMED RESTAURANTS AND A CATERING COMPANY OF THE SAME NAME. THE DESIRE TO COOK GREAT SEAFOOD AGAIN LEAD HIM TO OPEN WATERGRILL IN SAN DIEGO BUT IN 2016, FABRICE BECAME SELF-EMPLOYED ONCE AGAIN. HE PREPARES CUSTOM MADE ORGANIC MEALS AND SPECIAL EVENTS FOR INDIVIDUALS IN THE SAN DIEGO METROPOLITAN AREA.
FABRICE PREPARED MEALS FOR COUNTLESS WORLD LEADERS SUCH AS RUSSIAN PRESIDENT GORBATCHEV, GERMAN CHANCELLOR HELMUT KOHL AND KING HUSSEIN OF JORDAN AS WELL AS MANY HOLLYWOOD CELEBRITIES, SINGERS AND MUSICIANS SUCH AS MICHAEL JACKSON, THE GROUP POLICE, SIR ELTON JOHN, SAMMY DAVIS JR, LISA MINELLI TO NAME A FEW.
MR POIGIN HAS BEEN A COOKING INSTRUCTOR AT LOCAL COOKING SCHOOLS AND DEPARTMENT STORES
