I am a Seattle transplant from the lower county of Jefferson in Idaho State. The move to Washington was directed towards the Art Institute of Seattle in the Culinary Arts Field. During my studies of Classical Techniques and Basic Fundamentals, it was realized to me that a certification as a Stock Cook from college would not entitle me to a job with enough experience to succeed. I continued my education under the former Chef, Frank, at the Mecca Cafe. He taught me everything he knew to continue on as a Short Order Cook in a bar. He mastered my craft as Breakfast Cook for weekend service, where I spent the next 3 years. Fall of 2013 I volunteered to open The Lost Lake Cafe in Capitol Hill. My Superior, Chef Jim, taught me to work a Line. He introduced me to Plating Consistency, Time Budgeting, Trip Consolidation, Self Dependance, and Reliability. When I was ready he brought me to The 5 Point Cafe, where I have been employed in the time since. There my technique was finely tuned, my strengths as a Cook were built, and I returned to my employment both at the Mecca Cafe, and The Lost Lake Cafe. Which we came to know as the Unholy Trinity. I am Proud to say I was the first Creature to work all 3 in hopes of bringing our family back together. In honour of Mr. Dick Smith, through the legacy of David Meinert. I became a powerful force capable of Phenomenal things, while maintaining a Safe and Steady work environment, and building the Respects of my Peers and Coworkers. The one problem that still faults me is Tardiness... My Employment at these Outstanding Dive Bars has discontinued. I'm looking for a job this summer to help me retain my principals, as well as standards, and get me back up on my feet to exceed well beyond The Fall and Winter. I cant promise I can be your best choice, but I will promise you will be my biggest investment
