Halito I'm Ony, I am originally from the Duck Inn restaurant in Skamokowa, Washington (farm & dairy country). I grew up in the professional kitchen of my father who was a great master chef trained at the Cordon Bleu in Paris around the time of Julia Childs. He became my teacher, palate trainer and mentor before I could walk. I trained with him for 16 years and then ran away to live in Alaska on my own. I have continued to gained in my culinary education in great ways during my time in Alaska. I have 28 years experience with smoking and curing, butchering and processing wild game and seafood, gathering and harvesting of wild mushrooms, berries, herbs and flowers from the forest. I have become expert with cooking on wood fire. I am also an exceptional baker and have developed my own style of bread making. I develop and write all my own recipes and have created menus. I have written and hosted my own radio cooking show for 8 years. Maintained a proper website for over 10 years . I have owned 2 of my own catering businesses and a food truck on the Kenai Peninsula in Alaska. I have high standards for quality and natural ingredients and have developed my cooking techniques around getting the best from some of the best ingredients in the world. I have great passion and respect and take great care with beautiful ingredients, I never take them for granted, I just do my best to honor them and let them be great. I try to think of the balance between science and technique with artistic creativity and heart with the food I make. I want what I feed people to satisfy them at the table and make them feel good all the way home.
