The Lodge on Little St. Simons Island is an award winning eco-lodge located on a 10,000 acre private island. Little St. Simons Island has its own USDA Certified Organic garden providing seed to table ingredients for the Lodge which serves breakfast, lunch and dinner family style for up to 40 guests. Please visit www.....com for more information. We are currently hiring for a full time cook who would commute daily to the island on our staff boat and work 8:30am 5:00pm. This position is primarily responsible for preparing lunch and baked goods as well as assisting with dinner prep. Application: Please email resume, letter of interest and three references to ...@....com. Responsibilities: Accountable for guest satisfaction by ensuring LSSIs food quality standards are met. Prepare menu items from scratch including soups, salads, sauces, marinades, entrees, and desserts. Follow standardized recipes; determine proper cooking times, temperatures and methods. Work in a variety of cooking methods to assure timeliness, efficiency, and product integrity. Maintain LSSI standards for safety and sanitation while meeting local, state, and federal health and safety regulations Ensure proper holding and rotating techniques for storage, taking necessary steps to avoid losing or wasting product Maintain all kitchen equipment in a professional manner Take inventory and place orders Maintain kitchen, food shelves, reach-in coolers, freezers, walk-in coolers and freezers in a clean and orderly manner Demonstrate exemplary work ethic, technique, and productivity as a team member, assisting others as necessary Skills & Traits: Knowledge of classical, regional, and seasonal cuisine, ingredients, and techniques Above- average knife skills as well as proficiency in varying cooking techniques, saucier and butchery Ability to identify stock, soup and sauce products by taste and appearance Ability to prepare meals to meet various dietary restrictions of guests and staff (i.e., vegetarian, lactose intolerant, gluten-free, etc.) Excellent communication skills, both written and oral; ability to courteously present information in one-on-one and in group situations Ability to work with a variety of people and in cooperation with co-workers efficiently and effectively Flexibility to work weekends and holidays Job Requirements: LSSI adheres to a drug-free workplace; must be able to successfully complete background check and pre-employment drug screen. High school diploma or equivalent Additional culinary training and degree preferred A minimum of two years of demonstrated relevant culinary qualification and scratch-cooking experience in a hotel, resort or quality restaurant Servsafe Certification preferred Physical Requirements: Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods Ability to use sharp knives safely and proficiently Ability to operate gas-fired and electric ranges and ovens, broilers, deep fryer, grill, grinder and chopper, slicer, scales, mixers and potato peeler safely and proficiently Ability to perform repetitive tasks with accuracy Ability to lift, carry, pull and push up to 50 lbs. repeatedly throughout a shift Ability to read, write and communicate effectively in English, both written and oral May be exposed to mechanical, electrical, chemical and fume hazards No visible tattoos, visible body piercing (except ears) or unnatural hair color or hairstyles Benefits: Company paid health, dental and vision insurance 401k with company match Paid vacation and holidays
