As The Executive Chef of HH Management, LLC, I had to be quick on my feet and make split-second decisions with The Familys best interest in mind. The presentation is everything; from selecting appropriate fine china, either seasonal or occasional, creating the ambiance and tempo of service, pairing of wines, down to even the last crumb on the table cleared by my staff. Creating wonderful meals and memories for The Family and guests was my great joy; catering to the taste buds of apex executives, politicians, celebrities, professional athletes, and dear friends. Prior to my employment, the position was vacant for some time; therefore immediate restructuring of the kitchens, food pantries, butlers pantry, and gardens was urgent. Work began with selecting and establishing a rapport with gourmet vendors, meeting with architects and completely renovating the facilities, equipment, appliances, and technology. I established procedures for meal plans, procurement, inventory, food safety, staff management, consistency and quality assurance. After evaluating the staff, I implemented a comprehensive training program in all aspects of gourmet cuisine preparation and formal dining service. I created an expansive repertoire that was highly adaptable to ever-changing dietary requirements, allergies, and tastes.
