Professional Profile : Professional experienced individual with a focus and a drive to further my opportunities with a company that welcomes growth and loyalty. As an individual I am focused on setting high expectations and raising the bar for the service industry. I also do private events and catering and work as a private chef. I have worked with James Beard winner and runner up for the Mid Atlantic region Spike Gjerde of Maryland. I have been in the food service and restaurant industry for well over 20 years and for me its not just a career its a love a passion. My father was a cook so i guess its in my blood. I have had the honor of opening 3 restaurants from the ground up and enjoyed each experience. One of those restaurants was The Federal Bar in Long Beach, CA. where as the Executive Chef I had a staff of over 50 employees that worked for the restaurant. We were out of the Red in right about six months turning a profit which is rare in the industry. I really enjoy farm to plate cooking which incorporated into a menu born daily equals some amazing food. Having good communication skills is key to a kitchen running smoothly, that carries from all staff to management and more importantly your customers.
