Hello,
My name is Michael Lewis, I am a Garde Manger chef. Basically anything cold food based. (sandwiches, salads, hors d'ouerves, dressings, canapés). I am very creative with salads, dressings, sandwiches. Aiolis, and sauces for the sandwiches. Also, there's many different and fun composed salads that I love to make, antipasto displays, charcuterie displays, cheese displays and cheese stations, fruit platters, etc...
I have worked for 12 years at Mohegan sun as a Garde Manger, Horseshoe Casino for 4 years as a head Chef Garde Manger, Foxwoods resort and casino for 7 years as a Garde Manger sous chef, and currently as a Chef de Cuisine here in Vermont.
