I am a 33 year old chef from Ft. Worth Texas. I am currently living in Houston, I was previously employed by Sam Houston Race park as a sous chef. At the race track my duties were to assist the chef in overseeing the production of the food for the Winners Circle Restaurant, along with the private restaurant called the Jockey Club, as well as the concession stand grill. I would often do the ordering and inventory, and I acted as the head chef when we didn't have one for approximately 4 months. This was my first job in a managerial position, and it was quite a challenge. I am looking to take a step back, and learn what it really takes to become a successful chef. I have been in the industry professionally since 2002. I have an associates degree in culinary arts from the Art Institute of Houston. I have worked offshore as a chef, and have planned my own menus, which can be a bit of a challenge when cooking meals on a ship with employees from around the country, and world, so I had to quickly adapt to peoples taste buds and learn how to satisfy the entire crew. In February 2011, I was participated in the Taste of the NFL for the super bowl and got to work among some top industry chefs.
