I am calm, pleasant, helpful and hardworking individual who has a passion for fine food and creating both classical and contemporary dishes. I get great satisfaction working in a busy kitchen, and great pleasure from satisfied diners. I love the freedom of expression that cooking gives me and I am willing to work hard to build a career in the culinary world. I truly strive to be the best chef I can be and hard work and innovation are my main attributes. My philosophy on cooking is that food is euphoria if someone says that it taste the way there grandmother made it I get delight out of that and secondly that ignorance begins when education ends so I am always looking to learn. I love using fresh produce to create a menu that caters towards the customer while still pushing for the a more progressive way of cooking. From seaweed to wild mushrooms i try to add an angle of foraging to my cooking. I have worked in five star hotels with country house fine dining in Kerry to funky tapas bar in Cork, I have worked in Dubai on an opening of a restaurant while also working in several other locations. From a solid classical background my cooking style is always flavorsome and balanced, from my travels i have exotic flavors and a twist on some dishes too. I am in San Diego available for work.
