Chef in North Rustico, Prince Edward Island

As a passionate advocate of farm/water/forest-to-table sustainable cuisine, I create food experiences - recipes and menus based on local and indigenous ingredients. I have experience as Chef for fine dining, catering, bistro dining, private dining, and as Chef/Owner of a high-end comfort food 'food truck'. I am accustomed to working in unique and somewhat remote locations, which have involved planning the on-site gardens and sourcing local ingredients. I love geeking out over foraging, fermentation, and preserving the seasonal bounty for use over the rest of the year. In this past season as part of my work as Executive Chef, I wrote curriculum and recipes and taught ten unique classes on local food and beverages and food-related history on Prince Edward Island. Teaching is my passion, passing on knowledge of everything from herbs and edible flowers to methods of preserving to the finer points of mead. I am a Red Seal Certified Chef, and graduated with honours from the Professional Culinary Arts program at the Northwest Culinary Academy of Vancouver. I have both back and front-of-house restaurant and catering management and production experience, and come with a full slate of marketing, management and accounting skills.
