The Pastry Chef is responsible for coordination of pastry menu item production with Executive Sous Chef for various venues. Performs a variety of prep and baking tasks, ensuring that production needs are met and food is prepared in accordance with specifications. Essential Responsibilities and Duties: Meets with the Executive Chef on a daily basis to discuss special events and daily prep tasks, coordinating menu item production accordingly. Ensures all items are prepared to specifications and presented per guidelines. Organizes bakery department and Bakers to ensure the daily preparation of breads, rolls, muffins, cookies, pies, cakes, doughnuts, biscuits, and other pastries, including icings and frosting, according to established recipes. Places orders through Eatec system for regularly used supplies. Communicates any special needs with Executive Sous Chef. Performs basic data entry tasks into Eatec system to track production and transfers. Ensures that any new recipes or changes to existing recipes are communicated with the Executive Sous Chef and Culinary Administrative Assistant. Observes Health Department regulations regarding food handling, storage, proper temperature, and cleanliness of work environment. Assists with staffing, scheduling, evaluating, training, and monitoring of bakery staff. Reviews production schedules to determine variety and quantity of goods to bake and to assemble supplies and equipment needed for daily baking activities. Uses and maintains all assigned areas and equipment in a sanitary, safe and effective manner. Performs other duties as assigned.
