Chef/Cheesemonger opportunity for new 40 seat wine room in Glen Ellyn, IL. We are seeking an imaginative, artistic and creative candidate who is passionate about their craft. Must be able to build a small plates menu using a variety of ingredients in order to create classic and innovative food items complementing our international wine list. Ideally, we will have 8-10 small plates for the menu. Candidate will recommend menu items; prepare an assortment of tasty tapas and small plates using a variety of kitchen tools and equipment, but not in a traditional kitchen. Will be part of the wine room ‘experiential’ element by preparing at the back-bar area, designed for this purpose. Experience and passion for Charcuterie is a must along with seasonal menu offerings. We strive to partner with local vendors/farms, etc. for the produce and items we will work with for the small plate menu. The ideal person is quality oriented, organized, hospitality driven, outgoing, and possess strong communication skills. Our pillars to success will be a wine room with tastings, small plates with shared menu elements, prominent wine club with tier levels, special events in a private space, and an atmosphere focusing on customer service and experience. Responsibilities Include: Set up and stock food station with necessary supplies Plan and direct food preparation and culinary activities Modify menus or create new ones that meet quality standards Estimate food requirements and food/labor costs Arrange for equipment purchases and repairs along with the GM Prep all needed food items for service Proper execution of menu items Ensure that all food is made in a timely fashion and always in high quality Certify that all nutrition and sanitation regulations are kept Follow clear direction in food preparation and storing Determine how to present the food. Customers eat with their eyes prior to their palette Ensure uniform serving sizes, quality of plates and pricing Ensure that all food is ready for preparations Check freshness of food and ingredients Order and maintain inventory of food and supplies Work with our events coordinator for private events
