Summary of Position: (relocation assistance available ) Directly responsible for all kitchen functions including input on menu creation, food purchasing, maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, managing portion and cost control and sanitation and cleanliness. For immediate consideration email us at [email protected] Duties & Responsibilities: Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following: •Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues •Conduct daily shift briefings to Kitchen Colleagues •Conduct daily shift briefings with afternoon and evening FOH staff to ensure they are educated on what they are selling •Manage inventories, pricing, cost controls, requisitioning and the issuing of supplies and equipment for food production •Control waste •Cost menus accurately •Ensure all Kitchen Colleagues are aware of standards and expectations •Liaise daily with the FOH Manager to keep open lines of communication regarding guest feedback •Maintain and enhance the food products through creative menu development and presentation •Maintain cleanliness and proper rotation of product in chillers •Balance operational, administrative and Colleague needs •Ensure proper staffing and scheduling in accordance to productivity guidelines •Ensure the cleanliness and maintenance of all work areas, utensils, and equipment •Follow kitchen policies, procedures and service standards •Follow all safety and sanitation policies when handling food and beverage •Other duties as assigned • Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met •Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for all violations of company policies, rules and procedures •Manage the training of kitchen personnel in safe operation of all kitchen equipment and utensils •Responsible for training kitchen personnel in cleanliness and sanitation practices •Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas •Check and maintain proper food holding and refrigeration temperature control points •Provide safety training in first aid, CPR, lifting and carrying objects and handling hazardous materials. •Microsoft Excel, Word, Outlook. Qualifications: •A minimum of 5 years of experience in varied kitchen positions including chef de cuisine, sous chef, line cook, fry cook and expediter. •Must be able to communicate clearly with managers, kitchen and dining room personnel and guests •Be able to reach, bend, stoop and frequently lift up to 50 pounds •Be able to work in a standing position for long periods of time (up to 9 hours) As one of our Sous Chefs you will oversee day to day responsibilities. You will work directly under our Executive Chef. We want someone that can work with our systems and recipes and work their way into the creativity aspect. •You will always conduct yourself in a professional manner, treat your team with respect and find solutions to problems without losing you head. •You will work the line and manage in the Chef’s absence.
