**4/22/24 - UPDATE: Thank you to EVERYONE for the amazing responses and the desire to help out here. We have found a chef! I am keeping this up in case things don't work out for any reason. Very much appreciate all of you amazing chefs out there, peace and love for the great and honest work you do for people.*** Hi everyone. I need help in preparing ~2-3 square meals a day to help my mom who has chronic hypertension (high blood pressure). I am trying to find a nutritionist at the moment to figure out her nutritional needs (using her latest bloodwork). Based on the recommendation from her primary care doctor, she is underweight and needs to eat a 3,000/day calorie diet until she gets back to a healthy level (we need her to gain around 20 lbs). My mom is an incredibly strong and sweet woman who just needs some help now and she's filed with too much pride to ask but I want to do what I can to help her out after all she has done for me and my siblings. I have convinced her to try this route so am hoping we don't let her down! She needs a diet to help restore her immune system and raise her protein levels while also keeping her blood pressure in check. A diet rich in fruit and vegetables, particularly those containing high levels of potassium and magnesium and plant-based protein (i.e. lentils) is ideal for her at this stage. In order to reach her caloric goal, she is open to drinking a smoothie , which I might be able to prepare with my sister's help, so we really need to get ~2,500 more calories in 2-3 meals. We are South Asian (Pakistani) so familiarity with South Asian cuisine is strongly preferred. My mother will also only eat halal meat; I can certainly help get this if it is an issue for anyone. Since she is 78 and wears dentures, she can't eat things like steak or anything that's tough. She suffered a minor stroke in 2018, so anything requiring a lot of chewing is going to be hard. I think the ideal protein is fish (based on what she's told me) and she will definitely eat lentils. Anyway, I hope that's enough detail for this job. I've never tried anything like this before but am hoping someone out there can help/we would be honored to work with you.
