Now Hiring: Kitchen Lead for new French wine bar opening late May About Us: We are a small group of passionate professionals opening a French wine bar in Shaw (NW DC, right off Green/Yellow line metro). In addition to the wine, we will also have a full bar (French spirits only), and will be serving a small menu consisting of cheese & charcuterie and a few salads and sandwiches to start. We hope to start offering brunch later in the summer. Our ideal kitchen leader meets the following criteria/requirements/responsibilities - Knowledge of French cheeses and European charcuterie - Knowledge of French food/wine pairing - Ability to execute menu, including full prep of all items, as we will not be utilizing a freezer for daily menu items. Prep will be done on a daily basis to ensure freshness and quality. - Able to lead a small kitchen team, including scheduling of BOH staff, ordering, inventory, setting and maintaining par levels, dating/labeling, etc., prepare daily/weekly prep sheets - Work with ownership/management to continually develop menu regarding seasonality, guest satisfaction, and brunch menu development - Work within limited space and with limited equipment - kitchen manager must be highly organized and able to execute all tasks within these limited constraints - Awareness of daily/weekly/monthly food and BOH labor costs - Communication with ownership/management regarding all manner of BOH operations on a daily basis - Adherence to all health code standards - Full open availability, including nights/weekends/holidays - Ability to lift 50 lbs.; able to stand for long periods of time - Ability to operate all kitchen equipment, including slicer and panini machine, as well as maintain and keep all equipment clean and fully operational - Future responsibilities MAY include: coordination with ownership management on comprehensive private event food package including BEO food costing; brunch execution (plus prior menu development/tasting/food costing); catering menu Bonus qualities: - Culinary school degree or some formal training - French wine knowledge - Previous experience with preparation of French foods - Advanced knowledge of cheese/charcuterie - Current DC Food Handler’s license *This is a small wine bar with a small kitchen, and a very close-knit ownership/management team.
