I'm offering $150 for you to break down 3 lbs of fresh whole fish straight from Hokkaido, Japan. I am looking for a chef who has experience breaking down fish for sushi/sashimi consumption. If you don't have your own tools(ie. knife, fish scaler, etc), I can provide them since I will also provide the fish. If you have ideas for crudo or ceviche recipes, I am open to that as well. If not, I'll just have you prepare sushi/sashimi. I need this person for this Friday(9/13) or Saturday(9/14) night, no later. The fish will only be fresh for so long! Thanks! -Ethan
