PREP COOK Key Responsibilities: • Ability to execute recipes in an extremely precise and consistent manner within a monitored time frame • Facilitate batch and high-volume cooking without sacrificing quality, scaling recipes under direction of executive and sous chefs • Display confident grasp in basic mathematical equations and measurements, including grams, ounces • Ability to work quickly and cleanly in community, team-oriented environment Preferred Qualifications: • Three years of kitchen experience in fine-dining or catering environment • DOH or ServSafe Certified SOUS CHEF Key Responsibilities: • Facilitate successful production operation under the direction of the executive chef and founder/lead nutritionist • Management of inventory, ordering/purchasing, sanitation and personnel management • Ensure all kitchen activities adhere to HACCP guidelines for efficient, safe, and sanitary food production, preparation and presentation • Oversee strict adherence to recipes for consistent quality control across all production, weights and recipe scaling, and including the archived recipes put into production • Opportunity to serve as the department head for culinary operations in the absence of executive team, and assist in recipe development Preferred Qualifications: • Degree/Certificate in Culinary Arts or Nutrition • 5 years of kitchen experience in fine-dining or catering environment • Knowledge of food trends with a focus on quality and presentation • Interest in nutrition-centric food production, including vegetarian, gluten-free, and macro diets • DOH Certified
