Would you like to cook a tasty buffet dinner featuring local, seasonal ingredients on Saturday Sept 21. I am seeking a talented and creative chef and sous-chef for a one day event 15min away from Barrie, Ontario. This is a fantastic opportunity to showcase your skills. The event: We are having an event for 100 people at a camp in Utopia (15min from Barrie) this September 21st. We will be preparing salads, and doing some of the prep cooking the day before to help ease the stress (cutting veggies/ garlic/ potatoes, vegan dish ect). We would love your help cooking main dishes and side dishes for the 6pm dinner. The venue: The venue in Utopia has a fully equipped kitchen that has fed 100 people during camps, events and weddings.The meal would be buffet style and the chafing dishes will be provided. There are at least 7 deep ones and 20 regular depth ones. There is an 8 burner stove and a 4 burner and ovens. There is a walk-in fridge, a regular fridge and plenty of prep space. Pans and utensils are there (but please bring your own favorite knives). See attached pictures. A few folks will be available to move food from the kitchen to the dining hall. We are considering hiring a dishwasher for the dinnerware/chafing dishes, but ask that you could clean any pots/pans you use. The ingredients: All ingredients will be sourced and provided, but we would love your insight. The buffet-style menu would consist of garlic & rosemary roasted mini potatoes, roasted veggies (beets & carrots), chicken thighs, pesto pasta. We would like to source the chicken from a local pasture raised farm, so it will have been frozen. We are not meat-eaters ourselves, so we are open to your assistance with developing a cohesive flavour profile for the dishes, especially chicken. We would like to prep the vegan/vegetarian dishes for 14 vegetarian/vegans the day before, but we'd need your help cooking/ reheating. We were thinking squash halves stuffed with Mediterranean chickpeas and drizzled in a garlicky tahini. No one has allergies, but we do request that potatoes/veggies be prepared without butter, dairy, honey, milk or other animal products so all the vegans can also enjoy them too! Please avoid adding any refined sugar in the dishes, we have someone who is sensitive to sweet sauces (maple syrup could be used for carrots if needed). No allergies in those that have RSVP's so far! Please prepare chicken, pasta, roasted potatoes and veggies for 6pm dinner. Liability insurance required. we can offer $28-30 for one cook (you) and $18-22 for one sous-chef for 4 hours, or if you prefer to work alone 7 hours for just one cook ($30/hr).
