Thank you very much, Boffo Cinemas HR - - - - - - - - JOB TITLE: Executive Chef LOCATION: La Jolla DESCRIPTION: The Executive Chef will be responsible for food preparation, future menu planning, back of the house management, and cost management. In addition to daily back of house management, the Executive Chef will work as part of the management team to build sales and grow the business. The position requires excellent communication and team management skills, professional appearance, and the ability to maintain the highest of culinary standards. We are looking for candidates who possess initiative, dedication and a true passion for both hospitality and fine cuisine. Ideal candidates will have 5 years of culinary management experience in a fine dining, hotel, or catering environment. Applicants must work well under pressure, be organized, flexible, self- motivated, willing to work long hours, and be personable. This is a tremendous, high profile opportunity to create a La Jolla dining destination. DUTIES & RESPONSIBILITIES: 20% Fulfills all record keeping and administration requirements including: financial statements, invoices, inventory, and employee paperwork. Oversees purchasing and is responsible for food, labor, and restaurant expense management. 40% Oversee staffing, training, and evaluation of kitchen employees in accordance with policies and procedures. Directly train for Sous Chefs to ensure the development of their leadership skills, culinary skills, and team building. Maintain a positive atmosphere and a clean and safe work environment for employees. Demonstrate positive interpersonal skills with guests and staff. 15% Ensures compliance with health, sanitation, liquor, safety and employment regulations by clearly communicating and reinforcing standards and procedures to all employees. 10% Plans and coordinates menu that is compliant with company standards. Ongoing development of menus and recipes. 10% Works with General Manager to ensure that service standards are met by providing front of house staff with knowledge of menu, ingredients, and preparation methods. 5% Knowledgeable of food trends and continuously self educates on dynamic industry trends. REQUIREMENTS: 5 years of culinary management experience Catering Experience Experience in fast paced high volume atmosphere Exceptional organizational and communication skills Experience in vendor management Strong business acumen Culinary degree and pedigree Ability to read, write & speak fluent English ServSafe/Food Handlers certification Flexible schedule Position is full-time and requires regular, reliable attendance - - - - - - - - JOB TITLE: Restaurant Manager LOCATION: La Jolla DESCRIPTION: The Restaurant Manager will be responsible for maintenance of service levels, beverage preparation, front of the house management, and cost management.
