Job Type: Full-time Salary: $22.00/hour Minimum total 2 years of experience required in Japanese, Korean and Raw fish (Sashimi) area. Experiences more than 5 years in those area will be an huge asset. We are an Asian bistro focusing on Japanese sushi, rolls and some Korean foods such as Galbi and Kimchi. We are looking for an experienced sushi chef / ethnic food cook who could work 8 hours a day (5 days per week) starting from very early in the morning around 4:00 A.M. From 4:00 A.M. to 12 P.M., you will be asked to work as below.(Your break will be given from 8:00 A.M. to 8:30 A.M.) - Filleting huge raw salmons and tunas to prepare Sashimi and Nigiri. Since it can not be learned in short time(6 months of training period for example), you must have some experiences in filleting sashimi. - Making Korean foods such as Galbi and Kimchi. Those are very important menu in our restaurant. - Making sushi and rolls with given recipe and with YOUR OWN CREATIVE RECIPE.You will be asked to make at least 50 types of different sushi and rolls everyday. - Preparing ingredients such as carrot, cucmber, mushroom, seafood and chicken in specific ways to make those rolls. You should know the japanese style of preparing those ingredients. - Filleting barbecued eel. Filleting fishes are always very important role in our restaurant. - Peeling and unfolding shrimps - Making some salad such as Wakame - Making some Korean and Japanese soup such as Miso - Making some sauce such as Teriyaki(must be in traditional way. It takes a lot of time), Wasabi, Spicy Mayo, Calamari, and etc. - Preparing rice for sushi and rolls with great balance of vinegar. - Making fritter for shrimp, calamari and chicken in japanese way with Bakudan. It is much more difficult to make than most of other fritter. It would be better if you have experience in these specific type of fritter. You dont have to be perfect in English to do your work,but you should be able to do simple communication to collaborate with other cook or helper in the kitchen.Preference might be given to Canadian citizens or permanent residents. ************************************** [ Duties ] ************************************** - Minimum total 2 years of experiences are required in following three areas. 1. Any raw fish (sashimi) specialized food - Experiences more than 5 years in Japanese, Korean or fish specialized restaurants will be an huge asset. - You'd better have some knowledge for making shrimp fritter with Bakudan. - You must be able to do physically demanding work under pressure in fast-paced environment. - You shold be able to stand whole time during the work (except for your break time) - You should be able to prepare and manage ingredients. - You should be able to arrange the kitchen equipment. - You should create a new recipe and train other cook with your recipe. When you creat a new recipe, you sholuld be able to calculate operating cost and proper price for that menu. - You should be able to supervise kitchen staff and helper.
