Beginning in the 1990’s Luigi worked in the front and back of the house for the Backbay restaurant group, Rene Bettola, Manuel Sifnugel, Seth Woods of Aquitaine, in Greece with Luciano Addatore of Vino e mare, Ivan Ottaviani of Sale e Pepe Mykonos, in the Lyonese style with Davide Rosetto, in Los Angeles with Han Rockenwagner, Joachim Splichal, Little Door's T. Nicolas Peter, and Melisse's Josiah Citrin. He lived and served as Chef at the Zen Center of Hawai’i, the private residence of Lama Surya Das, and at the Zen Center of Cambridge.
