The Waterfront Restaurant & Wine Bar is located at Blue Diamond Marina & Resort on the shores of beautiful Priest Lake in Northern Idaho. The restaurant is open weekends (Friday-Saturday) Memorial Day - June and 5 days a week (Wednesday-Sunday) from July - Labor Day.
Summer lease is 10% of gross
Your income = gross income minus:
Food and beverage costs
Supply costs
Labor costs (server and other food service staff as required)
Restaurant lease fees
Lease includes marketing and advertising support provided by Blue Diamond Marina and Resort.
Simple on-site lakeside lodging accommodations available if needed.
The restaurant features:
Italian and Vegetarian cuisine
Fine dining in a casual atmosphere
Wine Bar with Appetizers or Small Plates, Lunch, Dinner
Restaurant also caters parties and weddings in the Priest Lake area
Beer and Wine license in place
Restaurant is upstairs, on the second floor of a 2-story building
Small, commercial kitchen with double-door refrigerator, 6-burner gas stove, double oven, chest and upright freezer, cabinets, and stainless steel counters/sinks.
Dining area seats 24 persons inside at round beech wood tables plus an additional 16-20 persons outside at white plastic tables (complete dish service).
Floor in dining room is currently being upgraded from carpet to beautiful wood laminate flooring.

Responsibilities include but are not limited to:
Function as chef and supervisor of food service personnel.
Engage with customers in a personable manner the kitchen is open to the dining area as such, your customers will be able to see and hear you and your staff while on the job.
Plan, test and cost new menus and menu items for daily lunch and dinner meal services, appetizers/small plates for Wine Bar offering and catered special events.
Order, purchase, distribute and stock all food/beverage/kitchen supplies. Inspect the quality and quantity of these items when delivered.
Drive to and from the Spokane Valley area each week to purchase food and supplies. This will require you to have your own insured vehicle for transportation. Wholesale food suppliers do not deliver to the smaller restaurants in the Priest Lake area.
Oversee sanitation compliance; lead and communicate to other team members.
As required, train and instruct staff on food preparation, cooking and serving of food items to insure that all items are presented properly.
Assign and monitor all work activities of food service personnel as needed.
Participate in the coordination of workflow and schedules to ensure that deadlines are met, and that policies and procedures are followed.
Participate in interviewing and selection of food service personnel, as well as the performance and evaluation of assigned employees.
Pay food-service personnel, food/beverage/supply costs and lease fees in a timely manner.
Qualifications
Must have a positive, entrepreneurial attitude and friendly demeanor.
Ability to read and understand recipes and menus, work in a team environment, handle multiple tasks at one time and communicate effectively verbally and/or in writing.
Ability to lead or supervise other personnel, perform detail work involving math calculations, problem solve, handle emergency situations.
Culinary Arts degree from recognized school with two years related experience in a comparable size food service operation is preferred.
Ability to hire, train and manage food-service personnel, providing effective work direction.
