Aburi Restaurants Canada is seeking an experienced Sous Chef with potential for Head Chef for their new Miku Toronto location. Popular Canadian Japanese restaurant company based in Vancouver will open its' first Eastern location in Summer of 2015. As a Japanese Fine Dining restaurant, home of the famous Aburi Sushi, we pride ourselves on exceptional service, high quality innovative cuisine, and a warm, welcoming atmosphere.

Reporting to the Chef de Cuisine, the Sous-Chef learns, prepares, and creates innovative and signature dishes served at Miku Restaurant. The Sous-Chef contributes to the guest experience by creating memorable dishes that play with local flavours of the season, freshly imported ingredients, and new inspirations. In this role, you are encouraged to explore your creativity and push culinary boundaries while managing inventory and maintaining safe and healthy kitchen and food handling practices.

The Sous-Chef's management responsibilities include both Operation and Organization Management, including leading by example, training and overseeing staff in your section, understanding target and concept, maintaining quality control, scheduling, and ensuring good team work. Sous Chef must understand and adhere to projections, food and labour costs, and be able to strategize on these points.

Qualifications:

At least 7 years experience working back of house
Experience working in a fast paced fine dining restaurant
Management experience
A passion for Japanese and/or Asian culinary art and flavours
Ability to recreate dishes following house recipes with house standards of taste, texture, temperature and presentation
Ability to properly butcher meats, poultry, and fish
Must be available to work lunch, dinner and split shifts, and be able to work weekends and statutory holidays
