I am a well trained pastry chef and chef. I have spent the last 20 years at Picasso in the Bellagio and while self trained, I have extensive pastry and food knowledge and a passion for teaching and instructing. I love playing with my food and thoroughly enjoy guiding others in playing with their food. I can show you everything from ice creams and sorbets to beautiful baked goods, sweets and chocolate and chocolate tempering.

Matt is a serious and talented Chef. He's also a seriously talented Chef. I hired Matt away from a neighborhood bar/cafe because I was impressed by his willingness to a) work hard, and b) try things he'd never done before. We forged a bond in the kitchen that lasted another two years and by that time I had promoted him to sous chef. At this time he was showing an extraordinary interesting talent in baking and was soon baking ALL the morning pastries for a super-busy Sunday brunch and then working the shift itself afterwards. If I had to pick three chefs to make a last stand with from all the people I've cooked with over the years, Matt would be one of them. I would work with Matt again in a heartbeat.
