Chef Job in Bronx, New York

Essential Functions: Must possess knowledge of how to properly fillet, pin-bone, skin and portion out different fish. Must have proficient knife skills. Properly measures and portions all food items. Complies with all portion sizes, quality standards, department rules, policies and procedures. Ensures proper food temperatures are maintained and food is stored correctly to maintain freshness and quality of all menu items. Packages all products to proper specifications. Performs opening, closing and side work duties as instructed and according proper guidelines. Keeps workstation and equipment clean, organized, sanitized, and sufficiently stocked. Follows and upholds all health codes and sanitation regulations. Sets up and operates kitchen equipment. Uses waste control guidelines and records all waste on spoilage sheet. Performs other duties assigned. Education & Experience: High school education is desired. Minimum of 6 months- 1 year previous experience in Seafood handling and butchery. Food Handlers preferred Culinary degree or training preferred. Knowledge, Skills & Abilities: Ability start overnight or early morning hours; start times vary per department. Must be able to work weekends (Saturday & Sunday). Ability to work 8 to 12 hours. Ability to work in a fast-paced environment. Attentive and detailed oriented. Capable of following procedures and taking directions. Ability to clearly communicate in English. Physical Requirements: Manual dexterity to perform twisting, turning and bending. Ability to lift and carry large pans from ovens or freezers, weighing up to 40 lbs. Ability to move rapidly and coordinate multiple orders. Standing and walking for entire length of shift. Required to wear oil and slip resistant shoes. Hours of operation may vary, including weekdays and weekends and may include some holidays. We are an equal opportunity employer.
