Stuart Bray comes with over 25 years experience in the culinary arts, at a young age Stuart, developed the passion for pleasing people through the preparation and service of his food. Born in Northern Manitoba, then moved with his family to Edmonton, where he has lived his whole life. In his early years he realized his great desire to cook, and worked through the beginning stages at smaller places, then spent two years at NAIT in the professional cooking program.
The passion in serving food that has a balance of presentation, slow cooking and flavour is this chef’s key factors to operating a successful kitchen. Through his approach to hands on production of soups and sauces it establishes a great basis for the actual plating of menu items. Stuart prides himself on working closely with his staff to ensure the core menu items are seasoned and cooked in a proper fashion. A solid base to the menu execution comes through having the right core ingredients and documented standards to which all production people must follow. He continues today with the same passion and desire to please his customers, and tries to instill the same attitude his subordinates.
Due too his strong influence and guidance, his mentoring of young chef’s has had a profound effect on his attitude and general approach to the culinary arts. He believes training and teaching the young culinary people of today, is something he takes very serious and accepts this responsibility willingly to establish a better dining experience for all patrons.
In managing a kitchen, Stuart believes you must shop properly and purchase the best product available,
with an emphasis on reducing waste and complete food utilization is a must. This attention to detail defines the type of Chef, Stuart wants to be recognized for and known for in the industry.
