With racetrack, casino and restaurant experience all over the US. Right out of the Culinary Institute, my first position was helping to take a young restaurant company from 10 units to 150 in eight years. Opening the Armadillo Caf was a reaction to the New American Cuisine, moving out of the west. These regional tastes and ingredients began moving familiar flavors into something new. In marketing my own restaurant, I taught numerous cooking classes and demonstrations. Participated in various print and visual media events over the years. From New Yorker Magazine, The Food Network, to a food series on PBS. Promoting our brand. A great way to expand my knowledge of cooking was to work with traveling cookbook authors as they promoted their brand and needed an assistant in the kitchen. Jacques Pepin was the chef who made the biggest impact on my cooking. For 5 years when Jacques came to the cooking school, I was his assistant. Having opened several of my own restaurants and some for others, I am well versed in design, permitting, and all of the systems that go into a successful operation.
