Professional Experience
04/18/20...-Present Dolce at the Highlands
I was hired for the sous chef position with the restaurant open for only three months. Once aboard, I hit
the ground running. We hand make fresh pasta and pizza dough daily, along with desserts and nightly
specials. I would arrive in the morning to help finish lunch, then prep sheets, and then roll right into
dinner service. Having a wood fire oven and a visual kitchen was definitely a bonus for us and the
customers. I was in charge of organization of the kitchen and storage, training of the staff on proper
sanitation and execution, as well as the nightly ordering and inventory. I also helped with off site menus
and functions for special benefactors and board members of Rancho Sante Fe, including catering events
for regular customers and corporate parties.

I was hired by Richard Blais and Jon Sloan to help open this amazing restaurant. I was a big part in
creating the hot lines and trained all new employees with new dishes and cutting edge ideas. I was
chosen as one of the leaders because I can work every station and build great kitchen moral. We pushed
out a average of 400-500 covers a night in a open kitchen. This was the best experience so far in my
career and I was happy to call this place my home for the last two years.

of Sysco, specialty, seafood, and proteins.
