I quickly began to work with great chefs such as Tyler Florence, Charlie Palmer, Christopher Kostow, and inevitably Thomas Keller (even working in his chocolate factory K M). While working up north I utilized my horticulture skills to create a small scale nursery business called The Little Guys Microgreens. Along with unique varieties of plants to grow at home I would also sell microgreens and edible flowers to chefs or farmers markets all over the bay area. I spent my free time exploring the endless bounty of Northern California by fishing, foraging, and diving deep into mycology. After enjoying the area for almost 7 years I moved to Los Angeles in search of warmer weather and fresh experiences. Immediately upon arrival I began to work closely with chef Helene An and expand my expertise in southeast Asian cuisine. I am always seeking out other great chefs to learn from, so don’t be surprised if the list continues in the future. Beyond these great chefs my experience ranges from everything from food trucks, wineries, luxury resorts, cozy B&Bs, personal homes, wok cooking, fine dining, chocolatiering, and even being a taquero!
