I was taught by a French trained chef Cheryl Lewis. I was led by Swiss chef's Urs Schmidt and Paul Renevey. They took me under their wings and, while other cooks were dispersed into the kitchen, I never left their sides. Julia Child, James Beard, Escoffier, Alexis Soyer are just a few of the names that were HUGE in my upbringing. I believe in using as close to 100% of a product as I can. If it has flavor-use it, build on it, and make everything better. I love the rules of French cooking, from the mother sauces to their offspring. Food can change a person's outlook on life with just a forkful...and it should!
