I am a former US Marine who loves Cooking, Snowboarding, Entertaining, and Saving lives. Before the Marine Corps, I was a Mortgage Broker right out of High School and made a ton of money before the Market Crashed in 2007. From March of 2011 when I retired from the USMC, to early 2014: I was a traveling seasonal employee working at various Resorts around the country. I took jobs such as: Housekeeper, Porter, Breakfast Attendant, Housekeeping Manager, Property Manager, Cook, Lift Operator, Groundskeeper, Gardner.. and I basically just volunteered to do anything that needed to be done. I chose to take such jobs so that I could see all aspects of the resort in order to expand my knowledge and experience, and to snowboard of course! On my free time, my dog and I train for Search & Rescue efforts in hopes to be a part of a SAR team, although about 4 months ago I had a great job and everything was Amazing, then I tore my ACL snowboarding before work one day. Because of the injury I have been unemployed for 4 months, recovering. And now that I just signed a new lease here in Colorado Springs, I am looking for a local opportunity to Serve people who appreciate good quality food with lots of Love and Technicalities! :-) What appealed to me the most about MeetaChef....... Is that I am in the process of finding a specific opportunity where I can have the freedom to run a large kitchen as the Manager or AKM. And this is a perfect way to pay the small amount of bills that I have, and be able to wait for the right career move for my future. The reason I’m shooting straight for a Management position as opposed to a Super Star Line Cook after only 3 years of Professional High Volume Kitchen experience, is that I am much more useful in a position where I can literally be everywhere at once.. If the dish pit is falling behind, I want to be able to help those guys get caught up.. If the line is pushing 10 minute ticket times, I want to be there for them to get exactly what they need in order to clear the wheel efficiently.. If servers are freaking out, I have to be available to take 13 seconds and help them put that charming face back on.. If cook/server communication is failing, I need to be able to Expedite and get everyone back on the same page.. And If someone is late, called in sick, let go, or quits.. I need to be free to cover their role, find a replacement for that role, and still stay involved everywhere else while never losing sight of the bigger picture. "The more responsibilities I have, the faster my brain starts working, and the more productive I can be. I'm like a stationary bike on its highest settings!" The Real reasons I must obtain this Role, is because in the next 2-4 years my brother and I will be opening up our own Restaurant/Bar somewhere in North Dallas.. We have investors already with us, and are actively scouting for the best location.. and the Menu has already been created! I want more than anything right now, to gain the experience of running a successful Kitchen for the next couple of years, so that I can make it second nature to me. It’s what I naturally do even without the title, (which sometimes gets me in trouble, lol) and I'm at a point where I must be in a position that allows me to take control and make sure the Kitchen is always running smoothly.. Because I am having a hard time with the fact of Knowing what needs to be done in certain situations, and not being able to just do it.. I’m very consciously aware of what’s going on, and I pay attention to the smallest of details. And with that, I am always coming up with new ways to make things better, faster, & more efficient, and I am always seeing miscommunication's that can sometimes get complicated or confusing between two parties, and Someone who is in charge needs to genuinely care about defusing those soon to be uncomfortable or unwanted situations immediately. And That's what I do best... Connecting things for people and basically being the broker of resolved conflict. I see the kitchen as a living system, It’s always changing and throwing you curve balls, and kicking obstacles under your feet.. So the ability to adapt is an absolute must, and that's also what I do best. But most importantly, I truly want to see my peers having fun and enjoying what they’re doing, so I'm passionate about making that happen. After all, we spend ⅓ of our lives at our place of employment and we need to put our heart and soul into it and Love every minute of it! That's why I always make sure the positive attitudes and morale are at its highest, and strive for everybody to flow as One. Yes, I'm a Hippie Snowboarding, Gaming, Entertaining, and Dog Training Nerdy Chef, who loves helping the World. And right now, My World is the Kitchen, and it will be for probably 35 more years. My best qualities are that I live my life through Balance, Truth, & Transparency, and I am a very genuine person because of it.
