I have vast experience in all aspects of food production. I am experienced in providing for patrons with diet sensitivities ie keto, Gluten free, vegan, vegetarian and to patrons with chronic allergies to many foods. I love and respect all ethnic cuisines and love to create them authentically. I am familiar with lacto fermentation for healthy alternatives.I have worked in England ,Ireland and Australia. I feel that the standard American diet is very bad for health as evidenced by the alarming rise in food sensitivities and illness. I am currently experimenting with the Keto diet and have dropped 25 lb in one month and feel great.... food for thought.
