I am a professional chef with more than twenty years of experience. I started my career when I was fifteen in my family's bakery, later I decided to become a cook. Away from sweets and cakes. My passion for travelling and learning about different cultures is reflected in my cuisine. I like to call it "MediterrAsian", a fusion of my roots and my experiences. With this, I seek the balance of flavours and culinary styles combining the latest techniques with slow cooking the old school way Throughout my career, I have had the opportunity to work in many types of cuisine from traditional French cuisine to sous vide cooking, without forgetting new trends and needs for healthy and allergen-free cooking. These experiences together with my background in haute cuisine and as a private chef have given me a lot of knowledge and versatility to work on all kinds of projects. In the last years of my career: I have designed the kitchen renovation supervising the purchase and assembly. I have been in charge of recruiting, training and managing kitchen teams for restaurants and for central production, catering and events. I have made, established and supervised food hygiene control plans following specific and local laws. I have developed new recipes and menus and standardized their production. I have managed purchases, negotiating prices and conditions with suppliers. I have managed losses and productivity, reducing costs by between 3 and 5% on average without lowering quality standards.
