I have 28 years in commercial kitchens and hotel kitchens. I excel in creating a delicious healthy menu for all occasions and meals. As owner of Trax we never used a broad-line distributor for our food supplies. We depended on local farms and smaller specialized purveyors. Trax was a scratch kitchen, we made everything on site. I can create a menu for many types of occasions and settings. I have an excellent palate for both food and wine.
