In almost two decades I have worked in a wide variety of restaurants and hotels. My first job in the kitchen taught me how kitchens work, how they flow, how everything in them must be respected. I have gained knowledge of many different styles of food and different types of cuisine. I started at the bottom and worked my way to the top through sheer determination, hard work and for my love of anything food related. Food excites me, when it comes to menu design I’m customer focused, I’m artistic and love to be creative with the freshest of ingredients and push myself to try new things, new techniques and styles. I’m a self- starter. Growing up in Scotland I learned how to work with fresh caught game from the land and I would cook French influenced dishes with these products, this is what really got me hooked on cooking.
