I have cooked for decades at top restaurants in New Orleans and NYC. 15 years ago, after being diagnosed with type 2 diabetes, I discovered how to cure myself by cooking life-changing food, without sacrificing flavor and satisfaction. Though I continued on in my career with restaurants where my habit forming cuisine had nothing to do with health, I learned more and more about special needs diets and how to infuse them with the same kind of layered flavors I used in my restaurants. Recently I decided I would like to share my discoveries by cooking for selected clients in their homes, people who could benefit from and testify to the effectiveness of my methods. I am very familiar with vegetarian, vegan, diabetic, weight-loss and cancer diets. Or if you are simply interested in a conventional meals with a healthy, light emphasis, I can provide a craveable array of options. Clancy's Restaurant in New Orleans, a top 10 establishment for many years, is the place where I established a New Creole style, patronized by many locals. The food there still bears my stamp of fresh, cooked to order cuisine. I am very familiar with local food product, sources and tastes. I have also created an array of proprietary spice mixtures that allow me to limit salt, sugar and fat in my cooking. World Cuisine is something I draw on heavily to add variety to the menus, including, but not limited to, Indian, Latin and Middle Eastern.
