My flavor portfolio includes French, Italian, German, Indian, Thai, Middle Eastern, Cambodian, and the many regional cuisines of the United States. My new American style of cooking features the best ingredients and flavors found in New Mexican, New England, Midwestern, Southern, Californian, and Pacific Northwestern food. I develop menus to meet specific dietary needs (for example, weight-loss, salt-, sugar-, gluten-, fat-free, etc.), or dietary preferences (for example, paleo, vegetarian, pescatarian, etc.). In my kitchen every ingredient is used in its entirety. This allows me to be very budget-conscious and supportive of reducing food waste.
